Aspire Tech has devised a technology to separate oil from frying by-products by utilizing oil*s ability to float on water, and has developed a water-oil fryer.

Water-oil fryer without worrying about by-products
Aspire Tech (CEO Oh Jeong-won) has developed a water-oil fryer and is supplying it to countries around the world. Food from water-oil fryers are not only delicious and healthy, but also economical. Cooking contaminates oil, mixes byproducts from food into the oil, and produces oil vapor during heating, which is not good for health. The company solved this problem by using water and oil at the same time. The water-oil fryer has cooking oil at the top and water at the bottom, so they do not mix and only the oil is heated, and the water is cooled to prevent the oil temperature from rising too high. With this fryer, the by-product sinks into the water beneath the oil. The animal oil mixed in with the by-products is heavier than vegetable oil, so it floats to the top of the water but sits below the vegetable oil, completely separating the oil from the by-products. This means that the by-products do not burn during cooking, resulting in a milder flavor, and the oil retains a small amount of moisture, which is good for creating a moist and crispy texture. This also minimizes harmful gases such as oil vapor and carbon monoxide by preventing excessive heating of the by-products without generating harmful trans fatty substances.

In a conventional deep fryer, the oil gets contaminated quickly and it is expensive to replace it. But water-oil fryers keep the oil fresh because it separates the animal oil from the residue, so it lasts up to five times longer than conventional fryers which also do not require refiners and filter paper. The fryer features patented metal-wired U-tube technology for maximum energy efficiency and oil temperature resilience while reducing labor and enabling high volume cooking. It also discharges sediment with water through the outlet and cleans itself automatically. The fryers are supplied to a wide range of locations nationwide and have been exported to Bonn, Singapore, the Philippines, Indonesia, Malaysia, Brazil, Thailand, Brunei, and Africa. The company is setting up an assembly plant in Indonesia at the moment. Aspire Tech won the Outstanding Environmental Improvement category at the 2022 Korea Environmental ESG Contribution Awards.
